Darren Chavez is our executive chef
and took over Kitchen Management in October of
2007. Darren joins us after being Executive Chef
at the Chama Lodge in Chama, New Mexico as well
as a creative mind at Whole Foods where he designed
gourmet meals that utilized all the organic offerings
of the company.
He brings together an understanding
of the necessity of simple meals as well as an
ability to cater to the finest tastes with creative
gourmet specials nightly. His southwestern specialty
stems from his upbringing and beginning his culinary
career in New Mexico over 20 years ago. "Darren's
Culinary Oasis" as it has been dubbed by
our customers may soon replace the name Polly's
Place. One thing for sure though, being the only
restaurant in Fort Smith we are held to a higher
standard and Chef Chavez makes sure we exceed
that.
